Typical Apulian dairy product, processed manually from whole cow's milk. White in colour, with the greater ripeness it takes on a straw yellow colour, it has the particularity of being composed of two parts: the external part is made from the same spun paste as the scamorza cheese, the internal part is made from a heart of butter.
