Delicious but sometimes unreachable, nowadays these artichokes are becoming more readily available. Cultivated in hilly conditions, the artichokes go through a number of different processing phases. Firstly, the more delicate buds are selected in an open field. They are then defoliated by boiling in water and vinegar, after which they are conserved in suitable containers in order to obtain the correct fermentation. All these steps are essential to achieve the correct pH.
Excellent to enrich salads, appetizers and side dishes, but also ideal with risotto or as an accompaniment for meat.
