In the village of Valcasotto, BeppinoOccelli collects and ripens his best cheeses,produced in the Langa or selected from theAlpine pastures of the Cuneo region.In the ancient cellars, the air, the purestwater, the constantly controlled humidityand the passage of time work in perfectharmony with the maturers to shape theidentity and personality of the differentcheeses.Made from goat’s and cow’s milk, “Cusiè”®matures for at least four months in thecellars of Valcasotto on planks of wood.
