Andria is a small yet flourishing city in the Italian region of Apulia in South Eastern Italy. It was here at the beginning of the 9th Century AD that five men created a new dairy product called 'Burrata'. One of these men was Pasquale Perina, known as 'Baffone' because of his unique moustache. 'Baffone' was amongst the promoters of 'Burrata di Andria'
Father to 8 sons and a grandfather to some 30 grandchildren, many of the family are still working in the family business started by him. Today, Caseificio del 90 is owned and run by Perina Pasquale who continues to work and grow the business to pass down to future generations of the Pasquale family.
