Between July and November in the cantabric sea begins fishing for the famous tuna Bonito del Norte. Fishing is done with rod and not with nets so as not to compromise the compactness and quality of the tuna. The catch of the day is immediately processed by hand to maintain the organoleptic characteristics of the fish.
